Fruit & Vegetable Beers
Fruit and vegetable beers are their own category and can range from sweet to sour and from cherry to cucumbers. These are fun beers that normally fall under seasonal or special release beers from many breweries. Pumpkin beers in the fall also fall under this umbrella. Breweries can use real fruit and veggies, extracts, fruit concentrates, purées or juices to get their desired flavor. Fresh fruit can be expensive especially in large batches, often syrups are used as an effective way to cut cost. Also fresh fruits can introduce microorganisms that could contribute to off flavors in the beer.
Lambic is a historical style known for utilizing spontaneous fermentation, fruits (Kriek, Peche, Pomme, Framboise, cassis) and barrel aging. By adding the fresh fruit into the barrels the Brettanomyces yeast slowly eats away at the fruit sugars leaving a tart, earthy complex beer.
The fruit can be added at different parts of the brewing process to accomplish different results. Some breweries may add the fruit at the end of the boil to sterilize the fruit and/or add a cooked fruit/vegetable taste-such as in the case of pumpkin beers. By adding your fruits/vegetable during the boil you expose those sugars to the yeast during fermentation and you will lose volatile aromas and flavors. During the fermentation process remember yeast eats sugar creating CO2 and alcohol, so to achieve fruit sweetness you would have to add the ingredients after this stage of the process. Fruits, syrups or extracts used during conditioning, secondary fermentation or before bottling will add the sweet fruit character as well as aromas to the beer.
